Arbois Vin Jaune100% Savagnin grapesJura's most famous wine, Vin Jaune (yellow wine) is made from 100% Savagnin grapes. The grapes are late-picked and the wine stored for between six to seven and a half years until it reaches maturity. During this process, evaporation accounts for the loss of 3% (13cl) of the original wine. As it matures, air enters the oak cask and a film of yeast (flor) forms that is specific to vin jaune and gives it its distinctive flavour. The evaporation means that vin jaune is bottled in its own unique 62cl clavelin bottle. Locally, the evaporated amount is known as "the angel's share". Vin Jaune should be opened and brought to room temperature for four hours before drinking (17°- 18°c). It can be enjoyed on its own as an aperitif. It goes well with strong cheeses, nuts, dishes with cream-based sauces, crayfish and foie gras. Can be kept for 100 years.
